How Do You Play Post Rock/Math-Rock Guitar?
Something along the lines of Foals, Explosions in the Sky, Battles, Minus the Bear, Sigur Ros, This Will Destroy You. They all have intricate guitar tunes, specially in the area of Math-rock artist its my undertanding that they use rhythmically complex styles of playing.
How can i learn to play and create my own Math-Rock/Post Rock tunes?
I think you are right about Math-Rock/Post Rock incorporating complex rhythms. A lot is based of polyrythems, where one part will fill in the gaps where another part is not playing and you get this sort of interference pattern when the parts are lining up. Math rock might be even worse, often encountering odd time signatures and sudden unpredictable rhythmic changes.
I'll give you an idea of how you could approach writing a song.
Part 1: lets make a simple 4 measure phrase, 2 chords all having the duration of a quarter note
Am-Am-Am-Am-|-G-G-G-G-|
-Am-Am-Am-Am-|-G-G-G-G
Part 2: lets put in another simple rhythm, straight sixteenth notes. We want the notes to line up with the chords in the background, so measures 1 and 3 we can choose from notes A,C, and E and on measures 2 and 4 we can choose from G,B, and D. This is what I want.

-Ex16-|-Bx7-Gx8-
Part 3: Lets make the rhythm doted eighth, doted eighth, eighth for the next part. Again I want to choose notes that are appropriate to the others playing. I want to choose something other than just C for the first measure because it would be boring to just have two of the same part, and the same for the rest of my parts. I choose that E in measure two because it fits the next measure, it is sort of a hint that we will be on that note next beat.

Part 4: This part I will use for the main melody. Listen to the other parts playing and see if you can find a good short melody to go on top. I won't write one explicitly but but it would be simple, just consider the chords in the background and play whatever sounds good to you.
Now to hide the fact that I am playing over a simple 2 chord progression, I might remove part one or change it so we don't just have plain chords going.
Hopefully this shows you how you can start a song. When you want to change to the next part of the song, switch only a part or two at a time to it flows well.
