Chicken Head

Does the chicken head look at you when you decapitate it?
My friends that live on farms say that when they behead their chickens to eat some of their heads are still alive after and stare at them and try to squack. How come this happens?
I grew up on a small chicken farm. We regularly harvested young roosters from our flock. When my dad chopped their heads off, their bodies, deprived of cephilization (central neural command center) spasmed, flopping around dramatically. The head, deprived of its cardio-vascular system and blood pressure, fades out. Before fading out the chicken with continue to struggle with death. This some of what happens.
